Yes, you can also knead and bake your own recipes. In the instructions, there is an overview of the programmes and for which type of dough they are suitable. With the (total) amount of ingredients, you should stick to the instructions and try something. Our first 2 loaves were not perfect right away. But here, too, there is an overview of what you should change in the recipe to make it more successful.

Mine kneads without any problems, even if the ingredients are not 100% right, and so far the breads have always turned out well (except for the one time when the yeast got soggy and didn't get out of the dispenser into the flour mixture) - I would say from the boat that something is wrong with your machine - annoying, but it can always happen. If I were you, I would contact the support (Galaxus) to either get an exchange or at least have the machine checked by the manufacturer or a service centre - apart from the fact that you tried to help it along with a spoon (you shouldn't do that), you haven't done anything wrong in my, admittedly not professional, opinion.

You can also bake sourdough bread - i.e. without yeast - with the appliance. Then you don't need sugar either. However, a little experimentation and a few attempts will be necessary. There are many videos on YouTube about sourdough bread. Recently I've seen machines where the corners in the dough container are even more rounded, that's a small flaw in this machine. You always have to use a spatula because the stirrer doesn't reach the corners, depending on the type of dough.

Is the extra cost worth it? The machine works and makes dough where cheaper machines from Aldi for 80 euros only make a "clack clack" sound. The mixer is simply solid.
So far, I have been able to knead the heaviest doughs with it. Even doughs where another cheaper machine broke down. I think it will also be able to knead rice pudding. You can use programme 31 "Knead dough" as the programme for this.

Yes it has 2 dough hooks included. They are not automatically retractable. However, I have only had one case where the dough hook got stuck in the bread when I took it out. The 'hole' through the hook in the bread is small.
