The trendy drink made from fermented tea with natural carbonation strengthens the immune system and promotes intestinal health. Kombucha is very easy to make: Brew the tea, cool it, add the kombucha fungus (a symbiotic bacteria and yeast culture) and let it ferment. The necessary basic knowledge for initial fermentation (e.g. suitable types of tea, basic equipment, making your own kombucha mushroom, basic recipe, etc.) is provided in the informative introduction.
In its raw form, kombucha has a tart, sparkling flavour. In a second fermentation run, the successful Kombucha brewer Louise Avery flavours "raw Kombucha" with various other ingredients and proves how versatile this drink can be modified and refined. Her kombucha specialities are available as fruity creations (such as classic raspberry tea, pomegranate-lime fizz or "blackberry-apple pie" kombucha) or vegetable-based (e.g. rhubarb fizz, Virgin Mary or fennel-apple kombucha). Combinations with flowers, herbs or spices (such as lavender love, lemongrass kombucha, turmeric immune booster or lychee basil mojito) complete the varied recipe selection.
