Good day, Does this monitor really "only" have HDMI 2.0? If so, the monitor cannot be operated at full resolution via HDMI. It would need HDMI 2.1 connections for this.

Yes, for full resolution@60Hz you need the Usb-c/Thunderbolt or Displayport connections. HMDI only manages 30 Hz with 5120x2160 - so the HDMI connections are relatively useless - unless you want to connect a Playstation or something in between and enjoy black bars left and right. Or for Picture-In-Picture or two PCs side by side.

Exactly, that's how Adrianpflu described it. We have this monitor connected to a new Mac mini. We virtually split this monitor into 2 monitors. Monitor 1 (Thunderbolt) 5120 x 2160 and monitor 2 (HDMI) 3360 x 1890.

According to Dell website: HDMI (HDCP 2.2), native resolution with HDMI 5120x2160 @30Hz, DisplayPort with 60Hz, via USB-C no problem at all and full resolution / Hz available.
